Sophie's Special Stupendous Surprise!
Tonight Rhiannon is doing a sleepover at Sophie's house. She wanted to make a treat to bring with her so she thought and thought about what Sophie would like?
Between herself and Gareth they came up with a plan: Cookies with dark and white chocolate chunks!
We searched Google for a basic cookie recipe that we could modify. This is what we came up with...
Recipe:
1 cup unsalted butter, room temperature
3/4 cup white sugar
3/4 cup light brown sugar
2 large eggs
1 1/2 teaspoons pure vanilla extract
2 1/4 cups plain flour
1 teaspoon baking soda
1/2 teaspoon salt
This was our extra ingredient:
1 1/2 cups roughly chopped white and dark chocolate pieces
The butter and sugar were beaten with the electric whisk until light and creamy. The eggs were added one at a time and whisked a bit more, then the vanilla extract.
Recipe:

The flour, baking powder and salt were mixed in a separate bowl and then beaten in along with the chocolate chunks. A few chocolate chunks had to be eaten by the kids to see if they were of a good enough quality!
The sticky mixture that we were left with was rolled in balls and placed on a baking tray and put in the oven at 180 degrees for about 10-12 minutes until golden brown around the edges. While the cookies baked the kids offered to help with the cleaning up by licking the whisks!
The finished cookies had to be tested as soon as they came out of the oven. They were sticky and chewy and the chocolate chunks were warm and melted in our mouths, yum!

Thank you for naming them after me. It is a very interesting name. Sophie's Special Stupendus surprise tasted delicous. Rhiannon is lucky because she got to sit on the bench!! One day I wil make Rhiannon some cookies named after her, called Rhiannon's Really, Radical Rock cakes.
