Pear and Raspberry bread.

What do you do when you promise to bake banana bread with your kids when you get home from school?
...only to find the bananas had...well... fermented in the fruit bowl ?!

You look around for ideas and find the next best thing.

Three soft pears.

Google "Pear Bread" and find the following recipe...

Pear and Raspberry bread

1 1/2 cups self-raising flour
Pinch of salt
1/2 tea-spoon bicarbonate of soda
1/3 cup brown sugar
1/2 cup chopped walnuts
1 egg
3/4 cup vegetable oil
2/3 cup milk
1 pear, peeled and chopped
1/2 cup raspberries

Preheat oven to 180 C
Sift flour, salt and bi-carb.
Stir in sugar and nuts
Beat the egg and oil together and add to dry ingredients.
Mix well to combine.
Add the milk and stir.
Add pear and raspberries.
Bake in greased loaf tin for approx 60min.
Leave in tin to cool.

  5. They are now out of the oven (I did it in muffin tins) but I'm slightly concerned that, with Husband working at home, they may not last until the kids get home!

  6. Good luck keeping them from your husband. I made mine in loaves and hid one in the back of the fridge! I sliced and toasted it a dew days later when everyone thought it was gone!
